All of the following recipes use the same base:
1 1/2 lb boneless skinless chicken breast, cut into cubes
1 6-oz pkg stuffing mix for chicken
1 1/2 c water
1: Bruschetta
1 t italian seasoning
1 28-oz can italian-style stewed tomatoes, well drained
2 cloves garlic, minced
1/2 c shredded mozzarella cheese
2: Amandine
1/2 t poultry seasoning
1 10.75-oz can condensed cream of chicken soup mixed with 1/2 c milk
2 c frozen green beans
1/2 c shredded mozzarella
1/4 c toasted sliced almonds
3: Cheesy Mushroom and Broccoli
1/2 t garlic powder
1 10.75-oz can condensed cream of broccoli soup
1/2 c milk
1 4.5-oz jar sliced mushrooms, drained
1/2 c shredded cheddar cheese
4: Tex-Mex
1 T chili powder
1 14.5-oz can diced tomatoes, well drained
1/2 c salsa
2 c frozen corn
1/2 c shredded mexican style cheese
1/4 c sliced green onions
Preheat oven to 400*. Place chicken in 13x9" baking dish. Sprinkle with seasoning. Combine stuffing mix with 1 1/2 c water.
Spread add-ins over chicken (everything except cheese/nuts). Sprinkle with topping (cheese/nuts). Top with stuffing mixture.
Bake 30 miuntes or until chicken is cooked through.
