LXXIV: Spinach-Ricotta Sauce

I love sauce. This is supposed to be for pasta

2 t EVOO
1 medium onion, chopped
2 cloves garlic, minced
1 c cooked spinach
1 c nonfat ricotta cheese
1 large tomato, chopped
1/4 t freshly ground pepper
salt to taste
1/4 c grated parmesan cheese

In a large skillet, warm the oil over medium heat. Add the onion and garlic and saute until the onion becomes translucent.
Add the spinach, ricotta, tomato, and pepper. Mix thoroughly; season with salt.
Add the parmesan; mix well. Pour over hot pasta.
